Chocolate Chip Cookies

Tina’s Amazing Paleo Chocolate Chip Cookies

  • Author: Tina Turbin

Description

This is my own altered version of a chocolate chip cookies recipe from DeliciouslyOrganic.net to allow these cookies to suit my family’s needs.

Ingredients

Scale
  • 10 tablespoons unsalted butter, softened
  • 4 tablespoons pure organic honey
  • ½ teaspoon vanilla powder
  • 1 large egg, room temperature
  • ¾ teaspoon unflavored gelatin of your choice (I use Knox)
  • 1 ¼ cups almond flour
  • 2 tablespoons coconut flour (exactly)
  • ½ teaspoon baking soda
  • ¾ teaspoon fine sea salt
  • 6 ounces dark chocolate of your choice – 70% or above is best!
  • OPTIONAL: nuts of your choice

Instructions

  1. Preheat oven to 350F degrees.
  2. Line baking pans with parchment paper.
  3. Combine butter and honey and mix with a hand mixer.
  4. Add vanilla powder, egg and gelatin. Beat on low for 30 seconds.
  5. Let sit for exactly 5 minutes, no less, no more.
  6. Sift the almond flour, baking soda and salt in another bowl.
  7. Slowly add flour mixture to wet mixture with hand mixer on low.
  8. Beat only until incorporated.
  9. Add chocolate pieces by hand and fold in by hand (add optional nuts at this step).
  10. Form dough into 1 1/2” shapes and place onto your parchment-lined baking pans.
  11. Bake 10-12 minutes until golden brown.
  12. Remove from the oven and transfer to a cookie rack to let cookies cool fully.
  13. They’re great served warm too!
  14. Enjoy!
