Description
This is my own altered version of a chocolate chip cookies recipe from DeliciouslyOrganic.net to allow these cookies to suit my family’s needs.
Ingredients
- 10 tablespoons unsalted butter, softened
- 4 tablespoons pure organic honey
- ½ teaspoon vanilla powder
- 1 large egg, room temperature
- ¾ teaspoon unflavored gelatin of your choice (I use Knox)
- 1 ¼ cups almond flour
- 2 tablespoons coconut flour (exactly)
- ½ teaspoon baking soda
- ¾ teaspoon fine sea salt
- 6 ounces dark chocolate of your choice – 70% or above is best!
- OPTIONAL: nuts of your choice
Instructions
- Preheat oven to 350F degrees.
- Line baking pans with parchment paper.
- Combine butter and honey and mix with a hand mixer.
- Add vanilla powder, egg and gelatin. Beat on low for 30 seconds.
- Let sit for exactly 5 minutes, no less, no more.
- Sift the almond flour, baking soda and salt in another bowl.
- Slowly add flour mixture to wet mixture with hand mixer on low.
- Beat only until incorporated.
- Add chocolate pieces by hand and fold in by hand (add optional nuts at this step).
- Form dough into 1 1/2” shapes and place onto your parchment-lined baking pans.
- Bake 10-12 minutes until golden brown.
- Remove from the oven and transfer to a cookie rack to let cookies cool fully.
- They’re great served warm too!
