Simple Meatballs

Meatballs are one of those foods that really remind me of childhood. Spaghetti and meatballs are definitely one of those “comfort foods”. Try Miranda Jade’s recipe for your next family dinner or make ½ the batch and save the leftovers if you are eating solo. More of her recipes are at www.GlutenFreeHelp.info.


Ingredients

  • 1 lb. grass-fed ground beef
  • ½ tablespoon garlic salt
  • ¼ white onion, chopped
  • Salt and pepper to taste
  • 2 zucchini
  • 1 jar of tomato/pasta sauce

Instructions

  1. Preheat Oven to 350F.
  2. In a bowl combine ground beef, garlic salt, onion, salt and pepper. Mix and combine well with hands.
  3. Make into small golf ball sized rounds.
  4. Place in a medium sized glass dish in the center of your oven.
  5. Bake for approximately 20 minutes.
  6. Using a vegetable spiralizer, take your zucchini and create noodles.
  7. Pour entire contents of tomato sauce into a pan on medium heat.
  8. Once the sauce starts to heat up, add your meatballs to the sauce and adjust heat to low. Cover with lid for 5 minutes, then turn off the heat and keep lid on until it is plated.
  9. Place noodles in a separate pan with oil, salt and pepper. Sauté until noodles are cooked.
  10. Serve the noodles on plates with sauce and meatballs on top and dig in!
