Paleo Waffles OMG

Weekends are a perfect family time to gather at my home for a late breakfast or a table loaded with brunch items. With two grown boys, a husband and now my 6 foot 3 inch son in law, I most definitely have hearty eaters always eager to have me finish up in the kitchen so they can dive in. Soon my grandson will be eating food and watch out Grammy! My daughter and I love to feed these men. It is so rewarding to hear those “oohs” and “aahs”. The creation of my Paleo Waffles OMG came as a trial and error in my kitchen from a variety of pancake mixes I was testing. It is rather easy to tweak a pancake recipe to become a waffle recipe so I gave it a try and Voila, Paleo Waffles OMG. I was star-struck at how well these turned out, how they cooked and most importantly how they tasted. For older kids you can make small waffle dollops on the iron to make Mickey Mouse waffles. They will love to add eyes, ears and lips with fruit and such once ready to serve, so yes this is child fun food too.

Paleo cooking is far healthier with the addition of good fats and less sugars and less carbs. Though it really does depend on the baker or his or her recipe you may be following and which ingredients are being used. Too many desserts and carbs in any diet are not ideal and not optimum for the body. The more active anyone is, is the more the body can work with and metabolize and use those carbs in a very positive way. Intense athletes do best by utilizing a hefty share of carbs, otherwise they feel crappy and their hard work can go down the drain unless they only want to lean out. There is a limit and it is not good in this case to get into too much fat-burning (otherwise known as “Keto”) on the adrenals which can then cause a confusing mess later on. Carbs in balance are great; always remember the paleo lifestyle incorporates the diet and the exercise – they go hand in glove in getting results.

Enjoy this paleo recipe, and remember to make extra since they freeze very well. Great for a snack or you can even add almond butter and use them as a little bread option, with a bunch of squares…:-) Kids love to make these! I cannot wait for my grandbaby to grow up and help my daughter, Miranda and me in the kitchen make these. It may be a tad messier but I love it all! I make a mess anyhow. Paleo Waffles OMG

Description

The creation of my Paleo Waffles OMG came as a trial and error in my kitchen from a variety of pancake mixes I was testing. It is rather easy to tweak a pancake recipe to become a waffle recipe so I gave it a try and Voila, Paleo Waffles OMG. I was star-struck at how well these turned out, how they cooked and most importantly how they tasted.


Ingredients

Scale
  • 4 eggs
  • 2 tablespoons honey
  • 1 teaspoon vanilla
  • 1 cup almond flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • Approx. 2 tablespoons palm oil or coconut oil (for waffle maker only)
  • OPTIONAL TOPPINGS: fresh berries, syrup of choice, butter or ghee of choice, cinnamon and erythritol, etc.

Instructions

  1. Mix all the wet ingredients together in a mixing bowl (leaving out the oil).
  2. Sift all your dry ingredients in one mixing bowl.
  3. Combine both bowls and mix very well by hand.
  4. Oil your waffle maker.
  5. Follow your machine’s instructions and do not over fill your waffle maker.
  6. Add additional palm or coconut oil as needed to prevent sticking.
  7. Serve warm immediately.
  8. Enjoy!
  9. OPTIONAL:
  10. Serve with berries and honey, maple syrup, sugar-free syrup or with ghee and syrup, or ghee alone.

Notes

For kids you can make small waffle dollops on the iron to make Mickey Mouse waffles. They will love to make eyes, ears and lips with fruit and such.

These re-heat well in the microwave at 5-10 seconds, all depending on your microwave, yet will burn if you toast them too high and will become a bit dry and crispy.

    I made these waffles this morning. Omg!!! YUMMY!! When you’re eating Paleo it is always a concern what you are going to be missing out on. These waffles put to rest that fear. Delicious, can tell no difference between what I’d get at a hotel breakfast buffet and these. But these are better bcos I know what’s in them and I stay true to my Paleo choice. Quick n easy to make these waffles are great!!
