This paleo (and of course gluten-free) recipe is packed with flavor that is so subtle, and so satisfying. The oil I use adds color and the saffron helps the richness in color and flavor. This cauliflower rice saffron style will be a new staple in your home as it is delicious, nutritious and has terrific appeal to the senses. I LOVE serving it up with my paleo curry chicken.
Since I was diagnosed with celiac disease, I of course could not have gluten. I love rice and how many dishes it goes in but I elected to try going off grains after being on the standard gluten-free diet for a number of years and still feeling pretty crappy. My blood tests showed minor improvement and I was heading into minor bone loss from the malnutrition. Once I started on the initial paleo diet my health and muscle tone changed dramatically. It has been easy to manipulate how I want my body to look, and I feel SO MUCH better and my labs are PERFECT, even my hormones.
Being off grains has been easy as I find so many ways to work with the basic premise of no grains and no legumes, like this recipe. I hope you enjoy and I hope you also feel very good. Ingredients
- 1 head of cauliflower
- 3 tablespoons red palm oil
- 3 very small pinches of saffron
- Salt to taste
Instructions
- Discard the hardest part of the stems and green leaves of cauliflower.
- Wash and dry it well.
- Grate the cauliflower florets and the softer part of the stem.
- Place grated cauliflower into a bowl.
- Cover with a damp towel.
- Place in microwave for 45 seconds.
- Place palm oil in skillet and heat.
- Add cauliflower and stir until heated.
- Add 2 pinches of saffron and stir to combine.
- Remove and place in bowl.
- Add a pinch of saffron on top for looks.
- Enjoy!
