Paleo Papas a la Mexicana

Paleo Papas a la Mexicana

Family recipes are always a favorite. They get passed down generation after generation and are timeless. This is an amazing recipe for Mexican potatoes (“papas” is the Spanish word for potatoes). Of course these are best served with the delicious paleo friendly Siete tortillas created by the Garza Family, who also shared this Paleo Papas a la Mexicana recipe today. I love to serve them with some scrambled eggs or even inside a breakfast burrito. So many possibilities.

The jalapeño is optional but it does give a good kick and just the right amount. This recipe is not limited to just breakfast. Consider these potatoes as a side dish for a potluck, or add some carne or sausages for a twist.

I hope you enjoy this recipe as much as I have and maybe you will carry down the recipe like the Garza family has in your very own home. I think I am addicted to their two kinds of tortillas!
