Oh dear, this delicious recipe was no small feat to come up with. Creating a paleo lemon frosting with taste yet not loaded with honey and the various sugars we tend to use and call them “paleo”. That was the goal.
I think you will like this frosting but it is one that is best kept cold, so no letting it sit in the sun despite it being dairy-free, vegan and keto-friendly. I love it on several of my paleo dessert recipes including my Lemon Cookies. OMG! It is also terrific on top of my Paleo Blueberry Scones. Just remove the blueberries and add some lemon zest to the recipe; after they cool, top with my paleo lemon frosting. Yum – no, double yum!
Just so you know, I am all about eating healthy and keeping my blood sugar low as much as I can and desire. I do not play a big “no you cannot have that, Tina” on myself. I have arrived at the stage in my life of not WANTING crap food all the time through these successful actions: step by step doing what was better for my body, what made me feel good and what made sense. I did not ever do Whole 30 or any big sudden major change. I just could not, sorry! I already ate pretty clean, grew up with family that did not have sugar around and have been gluten-free for many years due to having an autoimmune disease: celiac. Yes, I do like the taste of sweets, and can become a slight glutton when it comes to anything peppermint or dark chocolate. I did and do not need to drop weight as I am pretty small but I sure did need to firm up and drop some LOVELY fat from my butt and thighs, especially after popping out three healthy kiddos. Hey, I am a woman so go figure, but I accept that.
Now you know a tad bit of my personal life. I share this as I feel there are so many people struggling with the challenge of weight loss or TRYING so hard to be perfect at paleo. The original Paleo Diet is not a cookie cutter “everyone fits” diet at all. Please give yourself a break and take a step in the right direction and pat yourself on the back and enjoy the transition of making that single choice. If you are a female, you will love the help in the direction of hormones! That alone can help you drop that fat and feel better. I have met few (actually none) that it did not help.

PrintPaleo Lemon Frosting
Description
This is a great quick frosting to complement your favorite baked goods. The lemon zest adds a lovely freshness.
Ingredients
- 4 tablespoons Full Spectrum Shortening (at room temperature)
- 8 teaspoons Erythritol
- 4 teaspoons lemon juice (fresh)
- 2 teaspoons lemon zest
Instructions
- Mix all of the ingredients together and allow to chill in the refrigerator for about 20 minutes.
- This recipe is one I use to spread on cookies or in between a delicious layered cake. Many others like this on my various muffins as a sweet spread.
- Like many paleo and non-dairy frostings this will need to be kept cold until serving, or eventually it will soften and could melt depending on the temperature.
