I like stews and soups any time of the year. I always have. They are just simply satisfying and always hit the spot. This paleo easiest ever stew is loaded with proteins and fats so I can eat a bowl and be good for hours, which I need after my exercise. It literally takes minutes to put this primal dish together so, yes, this is another quick and easy meal I love to share with everyone. I love this stew with Cauliflower Mashed Potatoes or some yummy Paleo High Fiber Bread to sop up the juices!
The topic of grass-fed is big in the Paleo community and it truly is optimum if you can purchase grass-fed beef. We now have it available at many of the health food stores and Whole Foods is doing their share to carry a variety of cuts. It took me a while to get used to the taste and I am still not 100% in love with most grass-fed meats only because I became so accustomed to the fat and the way it tasted in grain-fed cows, and I loved it. Old habits, you know the motto.
There is a difference between grass-fed beef, and grain-fed beef. Cattle were meant to eat grass, not grains. In the mid-40’s cattle were happily fattened on grass, not grain and corn. Cattle are herbivores, not carnivores. Today’s cattle are given grains, corn, antibiotics and growth hormones not to mention the GMO issue! When a cow eats JUST grass and grass products, the beef is incredibly nutritious, high in Omega-3’s, which we want, not to mention a few other terrific benefits.
I was never steered away from fatty meats or meat as a child and my father loved a good Angus cut any time of day. In fact he grew up in his early years on an Angus farm and appreciated meats of all kinds. Meat was plenty available to me as was fresh or raw fish. I was born in Hawaii and later we moved to California where I lived right off the ocean in the Pacific Palisades area. So, protein was abundant to me and lucky enough my family did not indulge in sweets. To this day I will take a good steak or fish over a dessert, and of course a delicious fresh beef or seafood stew loaded with organic vegetables will be at the top of my list. PrintPaleo Easiest Ever Stew
Description
This is a great weekend stew. You can make up a big batch and have leftovers throughout the week!
Ingredients
- 1 ½ pounds round steak or stew meat
- 5 medium turnips
- 5 medium carrots
- 1–2 white onions or 15 Cipollini onions (I used Cipollini)
- 1 bay leaf
- 8 oz. tomato soup
- ½ cup burgundy wine
- Salt and pepper, to taste
- OPTIONAL: 1 rutabaga, 1 parsnip, 1 sweet potato or mushrooms
- OPTIONAL: 2 tablespoons tapioca flour
Instructions
- Preheat oven to 250F degrees.
- Cut up all the meat and veggies into approx 1 inch pieces.
- Put everything in a dutch oven or other oven proof casserole and cook for 5 hours.
- OR place in a crockpot and cook on Low for 8 hours.
- You don’t ever have to check on it!
- Lift the lid and serve. How easy is that!
- Enjoy!
Notes
Adding a small turnip, rutabaga, parsnip, sweet potato or some mushrooms adds more flavor.
Tapioca flour can be used as a thickener if you desire.
