Paleo Dark Chocolate Bacon OMG

Description

This is without a doubt one of the easiest and most rewarding paleo recipes ever. Your family will love you and will be asking for more. No mess and it’s easy to clean up. Now who can say that about bacon?! This is paleo meets bacon in your mouth – totally delicious. Yes, bacon is totally on your list of approved paleo foods and a terrific paleo solution.


Ingredients

  • 1 package of thick-cut gluten-free Applewood smoked bacon (I use Classic Dry Rubbed from Wellshire – much more meat than fat and thick cut!)
  • 1 cup dark chocolate discs – 60-70% (you can use your own but I do recommend this ratio of 60-70%. You can make this totally sugar-free with 100% dark chocolate and stevia and/or erythritol as your sweetener)
  • OPTIONAL: peppermint extract, sea salt, pistachios, macadamia nuts, mint leaves, etc.
  • UTENSILS: roasting pan and racks, heavy-duty tin foil, scissors and wax paper

Instructions

  1. Preheat oven to 350F degrees.
  2. Line your roasting pan with heavy-duty tin foil to catch drippings. This will make your clean up much easier.
  3. Cut your bacon into approximately 4-inch strips. In other words, your package will be cut into thirds.
  4. Lay your bacon across the racks so they are not overlapping.
  5. Cook in the oven for approximately 15 minutes.
  6. Turn over.
  7. Cook for another 10-15 minutes.
  8. The desired doneness is really up to you. Some like this more crispy and some like it more tender. I suggest trying both to see what you like.
  9. Take out and blot some of the oil off.
  10. Move to another rack to cool.
  11. Warm up your chocolate discs over a double boiler mixing constantly OR do what I do, and heat them up in increments of 20 seconds in the microwave. Stirring each time but DO NOT overheat as you will have a sticky mess.
  12. Dip your bacon in the chocolate.
  13. Place back on a clean rack with a liner underneath to catch drippings.
  14. Dress with your nuts, sea salt, etc. at this stage, while the chocolate is still wet.
  15. Place in refrigerator for about 20 minutes or the freezer if you want to speed things up.
  16. Serve as a dessert or snack or however you wish.
  17. Enjoy!

Notes

You can make these ahead of time and store them in your freezer or refrigerator.
