Paleo Curry Chicken

Okay, let’s talk curry! Not only is curry super delicious, but it’s also good for you. What an excellent paleo spice to use in your paleo kitchen!  Try this healthy and clean paleo curry chicken recipe alongside cauliflower rice or a veggie of choice for a perfect meal to end off the day.

Some of the benefits of curry include helping with joint inflammation, reducing the risk of Alzheimer’s, dementia, and cancer, and helping burn fat cells, and easing digestion (unless you make it too spicy—woo!). Wow, I don’t know about you, but I’m sold!

I talk about this all the time, but when you look at all the health benefits of items on the paleo food list, you can really see the importance of eating a wide variety of veggies, fruits, spices and herbs. Mother Nature provided us with so many ways to nourish ourselves, and I’m sure grateful!  Do enjoy and please let me know how you like this recipe.

Paleo Curry Chicken

Description

Ingredients

Scale
  • 6 oz. stewed tomatoes
  • 2 oz. hot water
  • 4 teaspoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 garlic cloves, minced
  • 1 large onion, diced
  • 1 chicken breast, diced (or a whole chicken leg or thigh)
  • Gluten-free soy sauce (1-2 dashes or to taste)
  • 1 red pepper (capsicum), de-seeded and diced
  • OPTIONAL: You may serve this dish over my cauliflower rice.

Instructions

  1. Brown your chicken and onions in a pan.
  2. Add all of the spices, stewed tomatoes and water and cook on medium heat for approximately 10 minutes – add more water if necessary so that it won’t dry out.
  3. Meanwhile, prepare your optional cauliflower rice.
  4. Add red pepper to the pan and let cook for about a minute or so.
  5. Serve in bowls, on plates with a nice side salad, other vegetable of choice or over cauliflower rice.
  6. Enjoy!

Notes

For larger portions, double the recipe or triple it or more.

For larger and more formal dishes, leave chicken parts whole and leave stew covered for 45 minutes until chicken parts are thoroughly cooked as in the picture.

      It is really up to you–it depends on your heat source and you add just to get the veggies to start to heat up and not burn your pan.

    Verdict: pleasantly surprised. That was my first time incorporating the cauliflower rice into any dish, and it took on the flavor of the spices very well. Will definitely make this one again.

    Is this 1 portion/serving? If it is only 1 serving, would I double the ingredients or just add another chicken breast to it? Thank you

      This is a recipe for 1 portion. You would double the ingredients for 2, etc. Thank you for your question. I have since update the recipe.

      I have corrected the recipe to add the stewed tomatoes at Step 2. Thank you for pointing this out to me. Also, be sure to see the note to learn about the serving sizes and preparing with whole chicken instead of diced chicken which might make a difference for you in appearance.

    I dont understand, how can you have tomatos if this is paleo ? paelo diet removes nightshades (potatoes tomatoes pepper to name a few) is there 2 definitions maybe? [other than this the recipe itself looks fantastic 🙂 ]

      Hi Jess,

      The basic paleo diet is not a removal of night shades. It sounds like you are on an auto-immune diet or a customized paleo diet which is fantastic, and as it should be. If you are sensitive to tomatoes than continue to stay off them.

    Wonderful meal. I browned the chicken and vegetables until they left bits in the bottom of the pan. Then added the curry and simmered for about 30 minutes. The brown bits added extra to flavor. 15 minutes before the end I added 8 Oz of sliced mushrooms and 5 minutes before serving I added 1 cup of fresh chopped pineapple. Kids love it.
