Paleo Christmas Cutout Cookies

Description

We have now truly entered the holiday season, which means it’s time for all the Christmas recipes! The perfect way to kick off this season is with baking these Paleo Christmas Cutout Cookies. These are scrumptious. They taste like shortbread, and are mildly sweet. Their amazing texture comes from protein-full almond flour. With these cookies you can enjoy all the fun of cutting out and decorating Christmas cookies, minus all the nasty sugar conventional ones have!


Ingredients

Scale
  • 1½ cups blanched almond flour
  • 2 tablespoons coconut flour
  • 1 large pinch sea salt
  • ¼ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/3 cup coconut oil, melted
  • ¼ cup pure maple syrup

Instructions

  1. Using an electric mixer or a large bowl and a spoon, mix together the almond flour, coconut flour, salt, baking soda and cinnamon.
  2. Stir in the vanilla, coconut oil, and syrup, and mix until thoroughly combined.
  3. Chill the dough in the fridge for at least 30 minutes.
  4. With a rolling pin, roll the cookie dough out on a parchment paper-lined surface until it’s about ¼ inch thick.
  5. Using your favorite, most adorable cookie cutters, cut out your dough, then place the shapes on a parchment-lined cookie sheet.
  6. Bake at 350F degrees for 12-15 minutes, then cool the cookies and serve.
  7. Enjoy!
