I get tired of the same old chicken salad. I always have leftover chicken in my kitchen as it is just so darned easy to bake, roast or boil. So, why not make extra?! I also love flavors, texture and seasoning, therefore my paleo chicken salad with a crunch recipe was born – it is truly an unusual way to make use of chicken with a unique twist.
Ingredients
- 2 cups chopped cooked chicken (white or dark meat)
- ½ medium Spanish onion, sliced and chopped into irregular pieces
- ½ cup raw pepitas
- ½ cup fresh cilantro, chopped
- 2 teaspoons fresh ground pepper
- ¼ teaspoon sea salt
- 1/3 cup homemade mayonnaise
- Optional: 1 teaspoon mesquite powder
Instructions
- Mix all ingredients together in a bowl.
- Place the bowl in the refrigerator to chill.
- Once chilled, salt to taste.
- Serve on a bed of greens, or with sweet potato chips or use in a sandwich with paleo bread.
