Paleo Chicken Salad with a Crunch

I get tired of the same old chicken salad. I always have leftover chicken in my kitchen as it is just so darned easy to bake, roast or boil. So, why not make extra?! I also love flavors, texture and seasoning, therefore my paleo chicken salad with a crunch recipe was born – it is truly an unusual way to make use of chicken with a unique twist. It is definitely one you will want to make over and over again.

I like to make this paleo recipe and keep it in the fridge to eat with veggie sticks, in a paleo zucchini wrap or over a salad like I did today. It is terrific to eat by the pool, as a meal, side dish at a party or a snack. I will often serve it with my paleo sweet potato chips.

The kids love this recipe. I like to introduce kids to a variety of flavors so they can get accustomed to this idea early on as well as reap the benefits of the various nutrients they receive. By doing this I feel they will grow a taste and appreciation of many foods and not frown upon new foods they are introduced to as they get older. I meet so many adults that have never eaten a variety of foods due to where they lived, how they were brought up, or what their family set out on the table. Some adults have a hard time liking something new. My friend for example made this recipe using my paleo toasted maple pecans in place of the pepitas and chopped them up and added them in for a sweeter version. It took me awhile to get my hubby used to the idea of eating egg salads, chicken salads and even tuna salads that did not fit in with how he felt they “should” taste like due to how he was brought up in the suburbs of Chicago, and what he felt was a “normal” taste to him.

So let your wings spread wide, and always try out new ways of creating recipes in your kitchen by adding additional flavors to your recipes with a variety of herbs, spices and sauces, and you will soon teach yourself a lot along the way.

Paleo Chicken Salad with a Crunch

Ingredients

Scale
  • 2 cups chopped cooked chicken (white or dark meat)
  • ½ medium Spanish onion, sliced and chopped into irregular pieces
  • ½ cup raw pepitas
  • ½ cup fresh cilantro, chopped
  • 2 teaspoons fresh ground pepper
  • ¼ teaspoon sea salt
  • 1/3 cup homemade mayonnaise
  • Optional: 1 teaspoon mesquite powder

Instructions

  1. Mix all ingredients together in a bowl.
  2. Place the bowl in the refrigerator to chill.
  3. Once chilled, salt to taste.
  4. Serve on a bed of greens, or with sweet potato chips or use in a sandwich with paleo bread.
  5. Enjoy!
