Easy Short Ribs

Description

OK, you wanted quick and easy, so here it is. This recipe of mine is definitely going to save you time with quick preparation. Cooking away in your crockpot while you are off doing the activities that are important to you, rather than slaving over the stove. Hopefully you need more time to do some outdoor activities, getting your body moving.


Ingredients

  • 2 lb. bone-in short ribs (I used ribs from 5280meatthis will also work beautifully with boneless
  • 4 tablespoons grass-fed butter
  • 4 tablespoons olive oil
  • ½ cup sweet Marsala (or sweet red wine)
  • 4 ripe tomatoes, chopped
  • 16 oz. boiler onions or 2 large onions
  • 24 oz. jar marinara
  • 46 tablespoons ground coffee steak rub of your choice, or make your own
  • 34 tablespoons onion powder
  • 3 tablespoons fresh ground pepper
  • Optional: lemon pepper

Instructions

  1. Chop and de-stem your tomatoes.
  2. Place half of the tomatoes in your crock-pot.
  3. Set the other half aside.
  4. Slice your large onion or pull dry skin off of your boiler onions and set aside.
  5. Clean and dry your ribs.
  6. Sprinkle all of your ribs liberally with the seasonings. Use more as desired.
  7. Melt 2 tablespoons of butter with 2 tablespoons of oil in a large skillet over medium heat.
  8. Sear your ribs, a few at a time on all sides.
  9. Once browned, remove the ribs that are done to a plate.
  10. Don’t over-crowd the ribs in the pan.
  11. Keep adding oil/butter as needed – be careful not to burn the fats.
  12. Leave all the drippings and bits in your skillet.
  13. Turn up the heat a bit.
  14. Pour the Marsala into your skillet, scraping up all of the bits and pieces.
  15. Cook low and stir allowing it to bubble a bit then turn down after 2 minutes or so.
  16. Add marinara sauce.
  17. Turn up the heat and stir occasionally.
  18. Allow to cook just until bubbling.
  19. Turn down heat.
  20. Simmer 1-2 minutes.
  21. Remove from heat and let sit.
  22. Place ribs on top of the tomatoes in the crock-pot.
  23. Add onions.
  24. Pour the marsala-marinara mixture on top of everything in the crock pot.
  25. Cook for 8 hours on medium or low heat.
  26. Serve on plates or in large bowls with the delicious juice.
  27. Mashed cauliflower makes for a terrific accompaniment to this dish.
