Dragonfruit Parfait

Pitaya, also known as dragonfruit is a very healthy ingredient. Rich in antioxidants and with its light flavor you can sneak it into many different recipes.

I like foods that are rich in flavor and color. This dragonfruit parfait is tasty and so visually appealing. This recipe would be great for a mid day snack or you could even put it into small glasses for a delicious paleo dessert at a party. I am always thinking of how to use recipes for larger groups so being a hostess isn’t so stressful.

You can play with different toppings to change the look of the parfait. Just make sure you use fresh fruit to top it off. This recipe was supplied by Chelsea Cohen the owner of Spiralife.

Ingredients

Scale
  • PITAYA LAYER
  • 1 (3.5 ounce) PitayaPlus Smoothie Pack
  • ½ very ripe banana, frozen
  • ½ cup frozen blueberries
  • 1/3 cup almond milk
  • MANGO LAYER
  • 1 cup frozen mango pieces
  • 1/3 cup almond milk
  • TOPPING SUGGESTIONS
  • Raspberries
  • Fresh banana slices
  • Chia seeds

Instructions

  1. Blend all pitaya layer ingredients and set aside.
  2. Blend all mango layer ingredients and set aside.
  3. Place half of the pitaya mixture in a parfait or milkshake glass.
  4. Top with entire mango mixture.
  5. Place the remaining pitaya mixture on top of the mango.
  6. Top with toppings of choice.
  7. Enjoy!
