So chilled watermelon paleo soup – what the heck is it?

This cool, fruity paleo meal packs in a lot of nutrients, amino acids, and antioxidants. Most importantly, it delivers full flavor and a plethora of natural goodness. A low calorie, low sodium, and low carb meal has never been so delicious!

Meal goals: This paleo recipe was created with many goals in mind. One was to mix fruits and spices and bring out a truly, extraordinary new flavor. Another was to find a creative way to consume the daily portion of fruit we all need without having to actually eat an entire fruit. Along these lines came the cold soup concept, which is perfect for the hotter seasons and a winner at any table when the right flavors are put together. The result was a power-packed paleo soup that is nourishing, rare and healthy.

Benefits: This potassium-packed paleo meal is not only delicious, but also highly nutritious.
Limes are tremendous sources of potassium, calcium and vitamin C with very low calories. Watermelons add a healthy amount of vitamins A, B6 and C along with amino acids, antioxidants, and lycopene. The medicinal value of ginger as a natural anti-inflammatory helps in the process of digestion, soothing your stomach lining and preventing it from bloating. Most importantly, every component of this paleo soup is a hydrant. Watermelons and limes have a high water content that will make you feel good and refreshed instantly.

Inexpensive and easy to make: This recipe calls for the flesh of 4 medjool dates for flavor (pitted), just 2 teaspoons of fresh, minced ginger, ¼ cup of fresh lime juice, around 10 mint leaves, and just a ¾ teaspoon of sea salt to spike up the taste buds. Ice is the base component that will bind the soup and chill it naturally, so all that you need to do is put the ingredients together in your blender. Nowadays, cold soups and smoothies are quite popular, so you may be able to get a mixer at a low price if you do not own one yet.

How to eat: A parade of flavors! Once your mix is complete (around 20 seconds in a smoothie mixer), just divide the final product into bowls and use spoons, as you would with a traditional soup. You will first feel the coolness and thick, icy texture of the liquid, followed by the fruity, sweet flavor of the dates and the watermelon. Almost immediately, you will get the punchy tanginess of the lime. The taste parade closes in nicely with the spiciness of ginger and mint. It cleanses your palate and leaves you feeling refreshed and satisfied.

Best ways to enjoy it: To make the best out of this low calorie, low sodium, and low fat super meal, consider serving it as an aperitif to set your taste buds going. You can also serve it after an indulgent meal so that the ginger, lime and mint can do their job of helping in digestion. It works perfectly as a meal on its own, or as a snack. Some even say that the soup is great as a (hush, hush) hangover cure given that it hydrates and replenishes vitamins.

Ingredients

Scale
  • 5 cups seedless watermelon (remove rind)
  • 4 medjool dates (pitted)
  • 2 teaspoons fresh ginger (minced)
  • ¼ cup fresh lime juice
  • 10 large mint leaves
  • ¾ teaspoon sea salt
  • 10 ice cubes
  • 4 wedges of fresh lime or black sesame seeds for garnish, if desired

Instructions

  1. Place all ingredients into a food processor or high-powered blender.
  2. Run the blender on high and combine the ingredients for approximately 30 seconds or until fully mixed. Occasionally, the leaves may require a little more blend time to become finely chopped.
  3. Pour into bowls and sprinkle with sesame seeds or garnish with lime wedge as desired and serve.
  4. Enjoy!
