5 Minute Paleo Banana Bread

I am so excited to be sharing this recipe with you all on Tina’s amazing site! I am Kaylie, the paleo food blogger from Paleo & Gluten-Free Eats, and I couldn’t be more excited to connect with you all and make some tasty banana bread.

This grain-free banana bread takes only 5 minutes to whip up and then it’s in the oven! Soft, moist, and naturally sweetened, this easy to make paleo recipe makes for a delicious snack or after meal treat.

Banana Bread brings back many fond memories for me. During my first days of being paleo, my sister and I would make mini loaves of banana bread stuffed with chocolate chips. I remember sitting out on the porch in the middle of the summer heat munching on slices of yummy banana and chocolate goodness. I have made many different banana bread recipes and the ones with the lowest sugar and soft airy texture are always the ones I go back to time and time again.

I am very intolerant to sugar, so less is always the best for me. Low sugar and banana bread usually don’t go well together, but I have never lost my love for it. This recipe is made with only whole foods and is sweetened naturally with only the sugars from the two bananas and some liquid stevia (which is completely optional). It’s a great feeling to know that I can bake something as yummy as banana bread, but know that it doesn’t have a high sugar content that would spike my blood sugar levels. Whole foods and lots of nutrients and protein, in my opinion, are always the best items to bake with.

Description

This grain-free banana bread takes only 5 minutes to whip up and then it’s in the oven! Soft, moist, and naturally sweetened, this easy to make paleo recipe makes for a delicious snack or after meal treat.


Ingredients

Scale
  • 1 cup almond flour, blanched
  • 2 medium bananas
  • 3 whole eggs
  • 1 tablespoon coconut oil, solid
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • OPTIONAL: 1/8 teaspoon liquid stevia

Instructions

  1. Preheat your oven to 375F degrees.
  2. Line a small baking pan (3 1/2″ by 5″) with parchment paper.
  3. Combine all of the ingredients in a high powered blender or food processor (this combines all of the ingredients into the smoothest texture and makes a big difference in the consistency and texture, so it is highly suggested to use a blender or food processor in combining).
  4. Once the batter is smooth, pour it into the loaf pan.
  5. Bake for 1 hour until golden brown on top.
  6. Remove from the oven and let cool.
  7. Enjoy!

      Hi Joanne,

      Yes, you can substitute other nut flours like hazelnut, macadamia, cashew, pecan or walnut but the bread will taste slightly different. The macadamia may have a bit too much oil and you may need to cut back on the “fat” just a tad to accommodate. You cannot sub with coconut flour though.
