Paleo Oatmeal Cookies

This paleo dessert recipe has been well-tested and is forever a hit with my family and friends. I am unable to eat oats; even those “dedicated” guaranteed, gluten-free oats bother me and they eventually stir up digestive troubles I hate to deal with, despite loving oatmeal cookies and oatmeal. What woman does not want to have oatmeal cookies in her cupboard? 🙂  My paleo oatmeal cookies recipe really is a breeze to make, and you’ll even save a bit of money since the hazelnut meal called for in the recipe isn’t as expensive as hazelnut flour.

I have a few very unique twists on this recipe but this is the first one I am sharing with you all. Do stay tuned as the others just get better and the little changes I’ve been making are also delicious, nutritious and don’t cause any tummy distress. Yay! You can make these for your kids and hubby and feel good about what you are offering and serving. You can even sweeten the offering and serve them up with this delicious butterscotch ice cream recipe. I think as women we have a bit of a responsibility to ensure our future generation is off to a great start, and the food and the meals in the house are usually in our hands.

If you are new to my site, I want you to know that even though I have celiac disease I stay off all grains and have thrived more than I can tell you since I made that transition. I was on the standard gluten-free diet (GFD) for many years and had worked intently in this field doing interviews with magazines, radio shows and working on research with MDs, yet in my own little world I knew something was awry and my health was still not thriving. Through my “secret side research”, the revelation of the effects of grains on the human body sparked a serious interest. I am not a scientist so it took a bit to understand and really accept these effects “scientifically”, but in the end it has proven to be SPOT ON! Ladies you will be happy to know I have been able to even balance my hormones stably. Crazy side benefits!

Just so you know, I seldom give into a gluten-free grain treat and I am asked this often. No, the “treat” just isn’t worth it to me when I feel so good and am able to make my own recipes to share with you, my family and friends, and at the same time help other women have a healthier home and help them feel good to get on with their OVERLY busy day.

Paleo Oatmeal Cookies

Description

These delicious paleo oatmeal cookies really are a breeze to make; plus they are a crowd pleaser so be sure to make plenty. I am unable to eat oats; even those “dedicated” guaranteed, gluten-free oats bother me and they eventually stir up digestive troubles. So what is in these if they don’t contain oats? My secret ingredient that you’ll love in these “oatmeal” cookies is hazelnut meal!


Ingredients

Scale
  • 2 ½ cups ground hazelnut meal (grind the meal so it’s semi-fine)
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ¼ cup organic honey
  • ½ cup minus 2 tablespoons of Full Spectrum Vegetable Shortening (softened)
  • 1 teaspoon vanilla extract
  • ¼ cup chopped nuts of your choice
  • OPTIONAL: ¼ cup gluten-free, dairy-free chocolate, chopped into bits

Instructions

  1. Preheat oven to 350F degrees.
  2. Mix your dry ingredients together in one bowl.
  3. In a separate bowl, mix together the honey, shortening and vanilla.
  4. Combine the wet and the dry and mix well.
  5. Fold in your nuts and chocolate and combine.
  6. Refrigerate the dough for 20 minutes.
  7. Place semi-heaping 1 tablespoon balls onto a parchment lined baking sheet.
  8. Space them about 3 inches apart to allow ample space for spreading.
  9. Bake for approximately 8 minutes (the baking time really depends upon your oven and size).
  10. Remove from oven and cool on a wire rack for a few minutes.
  11. Pop the cookies into the freezer and let them sit inside for about 10 minutes.
  12. Enjoy!

Notes

These will store in an air-tight container in the freezer beautifully and will last for months.
