Picnic Time – Paleo and Gluten-Free Bread

Tomorrow is International Picnic Day and since food is such an important part of the picnic, I could not wait to share this very simple and delicious paleo and gluten-free bread recipe with you!

Picnic Time – Paleo and Gluten-Free Bread

This tigernut bread is a lovely make-ahead bread to serve at a picnic or for any brunch, especially Father’s Day brunch. I recommend eating it open-faced and topped with your favorite accompaniments such as cold cuts, veggies, condiments, cheeses, etc.; you can go sweet or savory.


Ingredients

Scale
  • 6 pastured eggs
  • 2 tablespoons honey or maple syrup or your sweetener of choice
  • ¼ cup tigernut oil
  • ½ teaspoon apple cider vinegar
  • 1 cup plus 3 tablespoons tigernut flour
  • ¼ cup chia seeds or flax seeds
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt

Instructions

  1. Preheat oven to 350°F.
  2. Beat the eggs, sweetener, oil and vinegar together in one bowl.
  3. In a separate bowl, combine your flour, chia/flax, baking soda and salt.
  4. Mix dry ingredients slowly into the wet ingredients.
  5. Pour batter into a parchment paper lined loaf pan.
  6. Bake for 35-40 minutes.
  7. Remove from the oven and let cool in pan before slicing.
  8. Enjoy!

Notes

Will last for at least a week in the fridge – longer in the freezer.
