Memorial Day Pesto Recipe

This delicious paleo recipe is made with ingredients that are easy to find and you may very well already have them in your kitchen. So read on and let’s get to it.

TigerNuts and TigerNut Oil – If you are not familiar with TigerNuts yet, they are not actually nuts but small root vegetables.  Around 2 million years ago in the heart of Africa, our paleo ancestors relied heavily upon this super-root, making up to 80% of their diet.  TigerNuts are impressive since they are gluten-free, dairy-free, nut-free, grain-free, vegan and raw!  Plus, they are very high in prebiotic fiber, which resists digestion and helps our bodies to naturally develop probiotic bacteria, ensuring a strong immune system and eliminating various causes of fatigue, regulating body temperature, and preventing the onset of most modern diseases. Ingredients

Scale
  • 1 large handful of basil
  • ½ cup hydrated TigerNuts (soaked overnight)
  • 1 clove garlic
  • 2 tablespoons TigerNut oil
  • Sea salt, to taste

Instructions

  1. Place all ingredients into a food processor.
  2. Pulse until coarsely chopped.
  3. Add more oil and salt if desired.
  4. Enjoy!
