It is a very special occasion this coming Sunday: Mother’s Day. Many people are not skilled in the kitchen and some need a few very simple ideas. Let’s keep mom happy, healthy and not overburden her with a huge smorgasbord of food. Be sure to take mom somewhere incredible after this Mother’s Day breakfast idea, which I share below.

You can whip this healthy, simple idea up in about 5 minutes. With some free-range scrambled eggs on the side, you have a perfectly balanced paleo meal. I personally never feel like a huge meal upon waking. Many kids and dads get very excited about adding this and that to the breakfast idea for mom. Sometimes that somewhat overwhelms mom though; feeling a bit forced to nibble, regardless of what she may really want.

Oh dads, while I am at it, take this to heart. We are busy women and our role never ends; not morning noon or night. I personally love what I do so much, but I know I speak for most women when I say we’d love a little spa time out by ourselves, a little pampering somewhere. You can find oodles of ideas online and even on Groupon. I hope this helps. And I hope that special mom in your life enjoys her Mothers Day!

Description

Sometimes that somewhat overwhelms mom though; feeling a bit forced to nibble, regardless of what she may really want.


Ingredients

Scale
  • 2 cups almond milk, coconut milk or grass-fed full fat milk, or cream
  • 1 pint fresh blueberries, washed
  • 1 ripe banana
  • OPTIONAL: 2 tablespoons honey or maple syrup

Instructions

  1. Place half of the berries in one bowl and the other half in another bowl.
  2. Slice bananas and place in the bowls.
  3. Add 1 cup of “milk” to each bowl.
  4. Drizzle with honey or maple syrup if desired.
  5. Enjoy!
