If you know me or are familiar with my recipes, you know that I LOVE healthy fats and greens. This tasty dressing contains avocado, which is chockful of heart-healthy fat, and another one of my favorites, cilantro. Combined with a variety of other ingredients called for in this recipe, well you and your friends will be dancing with joy this coming St Patrick’s day. I have appropriately titled it: St. Patrick’s Day Avocado Dressing!
Interestingly enough avocado is actually a fruit! This delicious “fruit” is unique in that it contains both monounsaturated and polyunsaturated fats. These being the best quality of fats that you can consume and they’re also associated with improved blood lipids. Add to this the fact that avocado contains dietary fiber and you have yourself a winner for any paleo meal. Those of you who are on the KETO diet will adore this as well.
You’ll be surprised to find that you won’t need sour cream or mayo to make this dressing. The key ingredient here is Organic Gemini horchata; horchata made from the terrific superfood tigernuts!). Ingredients
- ½ an avocado
- Small handful of cilantro
- Pinch of sea salt
- ½ garlic clove
- ½ serrano pepper
- ¼ cup plain Organic Gemini horchata
- ¼ cucumber
Instructions
- Place all ingredients in an immersion blender or a mixer.
- Mix until well incorporated.
- IF desired, add more salt to taste.
- Enjoy!
