OK, you wanted quick and easy, so here it is. This recipe of mine is definitely going to save you time with quick preparation. Cooking away in your crockpot while you are off doing the activities that are important to you, rather than slaving over the stove. Hopefully you need more time to do some outdoor activities, getting your body moving as part of your New Year’s Resolution! This paleo easy short ribs recipe is an ideal meal for burning fat and building muscle for my meat-eating readers.
Up to now I hope you have been reaping the benefits of the goals you had set out for yourself at the beginning of the New Year, meaning your New Year’s Resolutions for 2016. Many people set out the New Year with high hopes to achieve a new diet change, body or health standard they’ve dreamt about. If you stepped off a bit, now is a great day to jump back on. While you are making your choices in 2016 in regards to meats, it is sort of silly to eat meats that are from cows loaded with hormones. The hormones these cows are fed make them plump up and gain weight (fat) quickly. This makes the muscle you are eating (their meat) not nearly as healthy as the muscle from a happy, healthy cow that is allowed to eat in the pasture. Do you want the optimum protein for your body to build muscle and burn fat with the least toxic burden? Then the best will be grass-fed and also grass-finished which you may not have heard of. You may read a wonderful interview I did with the 5280 meat ranchers in which they explain with such finesse the details of this very topic: What is Grass-Finished.
While shopping for your meats you should learn as much as you can about the ranch your meats are coming from. YOU can do this easily online. Just call your grocery store and ask for the meat department. They can tell you and you can ask them, but more than likely they will refer you to the name of their source. Whole Foods seems to know quite a bit more these days and can answer more questions. 5280meat offers incredible meat options, many types of meat too, on their site and on Overstock.com.
As a side note, I also highly suggest you keep this in mind with the milks and cheeses you may be drinking and eating as well as your protein shake ingredients. There are many fine grass-fed sources for whey protein powders these days.

OK, you wanted quick and easy, so here it is. This recipe of mine is definitely going to save you time with quick preparation. Cooking away in your crockpot while you are off doing the activities that are important to you, rather than slaving over the stove. Hopefully you need more time to do some outdoor activities, getting your body moving.
Ingredients
- 2 lb. bone-in short ribs (I used ribs from 5280meat – this will also work beautifully with boneless
- 4 tablespoons grass-fed butter
- 4 tablespoons olive oil
- ½ cup sweet Marsala (or sweet red wine)
- 4 ripe tomatoes, chopped
- 16 oz. boiler onions or 2 large onions
- 24 oz. jar marinara
- 4–6 tablespoons ground coffee steak rub of your choice, or make your own
- 3–4 tablespoons onion powder
- 3 tablespoons fresh ground pepper
- Optional: lemon pepper
Instructions
- Chop and de-stem your tomatoes.
- Place half of the tomatoes in your crock-pot.
- Set the other half aside.
- Slice your large onion or pull dry skin off of your boiler onions and set aside.
- Clean and dry your ribs.
- Sprinkle all of your ribs liberally with the seasonings. Use more as desired.
- Melt 2 tablespoons of butter with 2 tablespoons of oil in a large skillet over medium heat.
- Sear your ribs, a few at a time on all sides.
- Once browned, remove the ribs that are done to a plate.
- Don’t over-crowd the ribs in the pan.
- Keep adding oil/butter as needed – be careful not to burn the fats.
- Leave all the drippings and bits in your skillet.
- Turn up the heat a bit.
- Pour the Marsala into your skillet, scraping up all of the bits and pieces.
- Cook low and stir allowing it to bubble a bit then turn down after 2 minutes or so.
- Add marinara sauce.
- Turn up the heat and stir occasionally.
- Allow to cook just until bubbling.
- Turn down heat.
- Simmer 1-2 minutes.
- Remove from heat and let sit.
- Place ribs on top of the tomatoes in the crock-pot.
- Add onions.
- Pour the marsala-marinara mixture on top of everything in the crock pot.
- Cook for 8 hours on medium or low heat.
- Serve on plates or in large bowls with the delicious juice.
- Mashed cauliflower makes for a terrific accompaniment to this dish.
