Coconut Pie Crust or Coconut Tart Crust

In 15 minutes you can have a ready to go fully-baked toasted pie crust with this paleo recipe I am sharing with you today. My recipe gives you two options: Coconut Pie Crust or Coconut Tart Crust to then use with a filling of your choice. You can use any number of mine as well such as this banana recipe, or you can use the apple tarts filling included in this recipe. You could also get a bit more creative and fill the crust with paleo ice cream – peach mango, vanilla or chocolate!

Coconut Tarts or Pie Crusts

Someone online asked me if I had a nut-free option for a pie crust and to be honest, this recipe can be altered by omitting the almond flour if you have nut allergies and simply replacing it with a bit more shredded coconut. The almond flour does tend to absorb and help hold the baked shell together though. Let me know how this recipe works out for you and whether you use the almond flour or not.

Coconut Pie Crust or Coconut Tart Crust

Description

My recipe gives you two options: Coconut Pie Crust or Coconut Tart Crust to then use with a filling of your choice or you can use any number of mine. This recipe can also be altered to be 100% nut-free by omitting the almond flour and simply replacing it with a bit more shredded coconut. The almond flour does tend to absorb and help hold the baked shell together better though.


Ingredients

Scale
  • ¾ cup almond flour
  • ¾ cup shredded coconut
  • ¼ cup organic coconut oil (or grass-fed butter)
  • 1 tablespoon honey
  • 1 tablespoon vanilla

Instructions

  1. Toast the flour and coconut in a 350F oven for approximately 5 minutes. Toss every minute.
  2. Remove and let cool.
  3. In a bowl, mix the oil, honey and vanilla.
  4. Add the wet ingredients to the toasted flour and coconut.
  5. Mix all.
  6. Press into a lightly greased tart pan or pie pan.
  7. Bake for 10 minutes. Keep an eye on it.
  8. Remove and let cool.
  9. Fill with your own filling or try the apple filling in this recipe or my banana filling.
  10. Enjoy!
