Meatballs are one of those foods that really remind me of childhood. Spaghetti and meatballs are definitely one of those “comfort foods”. You don’t have to be a pro-chef to make simple meatballs. They are actually quite easy. In traditional meatballs they use breadcrumbs and in abundance. The bread helps to hold them together and adds moisture.

Miranda Jade of www.GlutenFreehelp.info found that eliminating the bread crumbs really didn’t change the texture as long as she used good beef, and it made it very easy to make this into a paleo recipe. Her delicious recipe is below.

The flavor in the meatballs really depends on your quality of meat, spices and sauce. You can make the best ever meatballs but if you don’t have a good sauce or good meat your hard work and money may be somewhat wasted.

I find this recipe to be really great if you are ever in a rush but still want a real meal. She used one baking dish for the meatballs, one pan to cook the zucchini noodles and one pan for her finished meatballs to be added to the sauce. Sure it’s a little more cleanup than a one pan meal but it is a lot tastier too! She says it is still an easy clean up. Now who does not appreciate that?!

Ingredients

Scale
  • 1 lb. grass-fed ground beef
  • ½ tablespoon garlic salt
  • ¼ white onion, chopped
  • Salt and pepper to taste
  • 2 zucchini
  • 1 jar of tomato/pasta sauce

Instructions

  1. Preheat Oven to 350F.
  2. In a bowl combine ground beef, garlic salt, onion, salt and pepper. Mix and combine well with hands.
  3. Make into small golf ball sized rounds.
  4. Place in a medium sized glass dish in the center of your oven.
  5. Bake for approximately 20 minutes.
  6. Using a vegetable spiralizer, take your zucchini and create noodles.
  7. Pour entire contents of tomato sauce into a pan on medium heat.
  8. Once the sauce starts to heat up, add your meatballs to the sauce and adjust heat to low. Cover with lid for 5 minutes, then turn off the heat and keep lid on until it is plated.
  9. Place noodles in a separate pan with oil, salt and pepper. Sauté until noodles are cooked.
  10. Serve the noodles on plates with sauce and meatballs on top and dig in!
  11. Enjoy!
