Contrary to what you may have heard, the paleo diet isn’t just beef and bacon. Vegetables are a very important part of the paleo diet and are important for our health. Brussels sprouts really got popular a couple years back and now I see them all over grocery stores and many recipes using them.

They are an excellent source of vitamin C and vitamin K. They are also a very good source of numerous nutrients including folate, B1, potassium and the list goes on. I try to get as many of my vitamins from food, and brussels sprouts are a great way to achieve this. This is especially useful around the holidays when so many tend to fall victim to that holiday flu.

This recipe does really well as a side dish especially with a delicious paleo fish recipe.
