Paleo Ambrosia or “Fruit Gumbo”

Paleo Ambrosia or “Fruit Gumbo”

The food of the gods indeed! This paleo ambrosia or “fruit gumbo” is an interesting variation on the traditional fruit salad, usually containing distinctive ingredients like pineapple, marshmallows, and coconut. On the paleo diet, this healthy recipe has been a favorite of mine. I have some on the side with breakfast, I eat it as a snack, or I enjoy it as a side dish with lunch or dinner.

On the paleo diet it’s important to consume as many fruits and veggies as you can. The bigger the variety, the better—so this is truly a paleo dish. (Of course you can leave out the marshmallows and honey to make it as paleo as possible.)

This recipe comes from my friend L.D. Sledge. It’s the perfect springtime or summertime treat. It will stay good for 3 to 4 days, but it will probably disappear before then! Top it with my Paleo Whipped Cream Coconut Alternative and it might just be all gone by the end of the first day!
