Fruit Gels

As a mother of three now-grown children (boy, how time flies!), it was always important to me to discover healthy child-friendly recipes. Even to this day, I love collecting paleo gluten free recipes for kids, like these gluten-free fruit gels!

The below recipe is not Paleo as it contains sugar. I seldom will relent to a sugar recipe on this site, but it can be easily made with “powdered” erythritol, so not to worry. Just buy your erythritol and grind it into a powder.

I give both options in the recipe as I know some moms feel a little sugar now and then is OK and not that harmful.

Description

Now this recipe isn’t paleo, as it contains sugar, but it’s gluten-free and dairy-free in case you have children who are sensitive to those foods. My kids used to gobble these up in their lunch boxes, and they loved making them with me in the kitchen. Making child-friendly recipes like this one with your child is a great way to bond and instill in them a love for cooking.


Ingredients

Scale
  • 1 envelope of gelatin
  • 2 cups fruit juice
  • 1/3 cup sugar (powdered erythritol and 23 drops of stevia are optional to replace the sugar)
  • Citric acid, if desired, for sour taste

Instructions

  1. Pour 1 envelope of gelatin into 1 cup of cold fruit juice.
  2. Cook another cup of fruit juice until hot.
  3. Mix in 1/3 cup sugar (or erythritol and stevia) until dissolved.
  4. Combine juices and pour into 9 x 9 inch baking pan.
  5. Refrigerate overnight, then cut into squares and toss with sugar (or powdered erythritol), adding citric acid to sugar for sour gels.
  6. Enjoy!
