Taco Day with Paleo Beef Chorizo and Egg

When I create a Mexican meal it is always fun, festive and full of options but this year it is incredibly exciting for me as today is official Taco Day and I usually cannot eat a real taco due to my reaction to grains. This year I am making Paleo Beef Chorizo and Egg (Beef Chorizo con Huevo estilo Siete), a personal recipe given to me by the Garza Family, of Siete Family Foods. They also shared with me their families’ Salsa Fresca recipe which you will also find below. Sitting proudly on my table are both of their paleo, grain-free, gluten-free tortillas!

I can get tired of lettuce wraps just like anyone else and the alternate makeshift options when I am wanting a “real” taco, enchilada or the like. These tortillas are out of this world and are truly the finishing touch on my display.

I like setting my food out buffet style so my guests can load their plate up however they please. I put out the proteins, the tortillas which are nice and warm and then whatever else like guacamole, sliced tomatoes, onions, etc.

The spice selections with the beef, that little bit of vinegar and the eggs make this an ideal meal for breakfast, lunch or dinner. Scoop up some bites with your tortillas or make this your Taco Day and take your chorizo and load up your tortillas and top with any topping and sit back and enjoy every mouthwatering bite like we did! Be sure to check out the Siete Salsa Fresca in the below recipe box! This is a family recipe and one that is a perfect topping for these delicious tacos.

Taco Day is incredibly exciting for me this year as I normally cannot eat tacos due to doing so poorly with grains. But not this year! This year I am making Paleo Beef Chorizo and Egg (Beef Chorizo con Huevo estilo Siete), a personal recipe given to me by the Garza Family, of Siete Family Foods. Sitting proudly on my table are both of their paleo, grain-free, gluten-free tortillas! Be sure to also make the Siete Salsa Fresca below, the perfect topping for these delicious tacos.


Ingredients

Scale
  • 1 lb. grass-fed ground beef
  • 2 tablespoons chili powder
  • ½ teaspoon salt
  • ¼ teaspoon ground cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon apple cider vinegar
  • 8 eggs
  • 1 tablespoon coconut oil or ghee
  • OPTIONAL: Siete Salsa Fresca
  • 6 Roma tomatoes
  • ¼ onion
  • 1 jalapeño seeded and chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • Juice from 2 limes

Instructions

  1. Heat a large skillet with your coconut oil or ghee.
  2. Place the ground beef, salt, cumin, garlic powder, and onion powder in the skillet and cook until browned.
  3. Add chili powder and apple cider vinegar to the cooked beef and simmer for 3-4 minutes on medium heat, stirring frequently.
  4. Crack the eggs and pour them into the skillet and cook until scrambled.
  5. Serve with warmed Siete tortillas and optional Siete Salsa Fresca.
  6. SALSA DIRECTIONS: Put all of the ingredients in a blender and pulse until desired consistency is reached.
  7. Enjoy!
