Pancakes are one of the joys in life that need to be there no matter what. We all need a good stack of pancakes in our lives. With this wonderful recipe for 4 Ingredient Paleo Pancakes supplied by Kaylie Johnson of PaleoGlutenFree.com, breakfast couldn’t be easier. This recipe looks as good as it tastes and is really simple and quick to make, not to mention rewarding! You know I am all about quick and delicious yet nutritious dishes. This is one of them! Dreaming of breakfast all day long? It couldn’t really make me happier to wake up in the morning, then to wake up to a stack of these beauties.  Everybody has their favorite go-to Sunday breakfast treat and a good stack of paleo pancakes is always on my list. Easy recipes and I are best friends, as long as they are yummy too! This easy recipe for grain free pancakes makes it easy to make a healthy breakfast that is both delicious and good for you!

Soft, fluffy, and made with only four ingredients, it will only be minutes before these tasty pancakes will be on your plate. I’m not kidding when I say that I make this recipe in 5 minutes! The whole foods in these pancakes include: plantains, eggs, and almond butter… And the last ingredient: baking powder.

I am eternally in love with plantains and I am so glad they are as delicious as a banana, but have less sugar. Cooking with plantains is easy because they have a good starch content, amazing flavor, and can easily be added to baked goods. Plantains are a relative of the banana and trust me, they have a striking resemblance in looks and flavor! Plantains are served as a main food group in many tropical countries. I vote we should make Plantains a main food group in America too. Plantains can be made into chips as in this tostones recipe, eaten with a bite of almond butter (or peanut butter), and also added to baked goods.

I will snack on a bag of plantain chips during car rides and eat plantains with almond butter every morning if you let me. My family will devour an entire bag of plantain chips as a snack and I don’t blame them, these are some tasty eats! Since I could never have enough plantains in my life, I absolutely had to make them into pancakes and kick off the morning with some serious deliciousness!

Description

These soft and fluffy pancakes contain only 4 ingredients and are amazingly easy to make – not to mention quick since it only takes about 5 minutes to create each pancake. Enjoy these for breakfast or for any meal of the day.


Ingredients

Scale
  • 3/4 cup almond butter
  • 3 whole eggs
  • 1 very large ripe plantain (or 1 1/2 regular size plantains)
  • 1 teaspoon baking powder

Instructions

  1. Combine all of the ingredients in a food processor or high powered blender.
  2. Blend until smooth.
  3. Heat a frying pan over medium heat (you can also use an electric pancake griddle).
  4. Pour 1/4 cup of batter for each pancake onto the griddle.
  5. Cook for 1 minute on each side until cooked through and golden brown.
  6. Enjoy!

Notes

If you don’t have plantains, you can substitute 2 bananas.
